So I used my cast iron skillet again last night. I had to. I made burgers. With homemade buns of course. Gotta love that bucket of bread dough.

Anyways. The burgers. They were huge! They must have been a good half pound each and cooked up beautifully in my new skillet. When it came time to assemble we ran into a little problem. I had no idea how we were going to eat them. Even if I hadn’t put any toppings on, they still would have been to big to fit into my mouth. But I did put toppings on. Because I love a challenge.

Monster Burger

I’m just lucky we didn’t have any lettuce or tomatoes. I took 1 bite into it (the bun mostly) and knew it would be impossible. My plate was covered in grease and ketchup so I asked Richard for a new one. And a knife. The plan was to cut that sucker in half, but it would have none of it. The burger fell apart and the bun refused to separate. By the time I got that damn thing cut all the way through, it was a mess. I wanted to cry. But I was hungry. One half remained mostly intact so I ate that first. I was full by the end of it, but I couldn’t let it get the better of me. I finished the whole burger. There were some bun bits left, but they were simply casualties of my burger war. I came out covered in grease and condiments, ready for a nap, and most of all, victorious.

I also made sweet potato fries, which were delicious as well.

    That’s how my burgers always turn out, too, I usually end up serving the lettuce, tomato, onion, etc., on the side. Sometimes the bun, too!
    I’m glad you like your cast iron skillet. I have one that I’ve had for thirty years or more now, I carried in my backpack when I hitch hiked across the country, so you can see how much I treasure it. It has a wood handle that unscrews so I can put the skillet in the oven, like for skillet corn bread. That old wood handle sure shows its age, ’cause a few times I forgot to unscrew it, and it got a little burnt.
    One thing I’d say about the seasoning thing, if you mess it up, no big deal, it will re-season just fine. I’ve seen people go balistic when they or some one messes up the seasoning on their pan, but it’s no big deal, really, you’ll have the pan so long you’ll forget how many times it’s been re-seasoned. No reason to cry or anything….

    Yes, it’s very heavy, but I wasn’t gonna give up my skillet!

    I’ve learned to be less anal with the proper washing of my skillet (read: lazy) and have come to accept it’s indestructibility. Besides, we use it every day; that puppy is gonna get properly seasoned in no time. I love it.

    Yeah, I use them for just whatever, and am kind of careful with them, wash with the hottest water possible, if they need to be soaped and scrubbed, I soap and scrub them, then put a tiny drop of vegetable oil, tiny drop, and rub it thoroughly to get a very thin coating of oil before putting it away. I have a huge 12 quart cast iron dutch oven that doesn’t get used too much, and that treatment really helps it stay nice.
